Two Dinners and a Dessert

After my first week of making new recipes for the February Challenge, I am happily ready to report on my endeavors!
Did you make anything new this week?
I was sick for most of the week, but I did manage to make three new things: two dinners and a dessert.
One of them came from a recipe website, one from a cookbook, and the other from my friend’s blog. I love the variety of ways to share recipes, don’t you?

The first thing I chose to bake was something that I have never, ever attempted: Banana Pudding. The recipe is actually called Deep-Dish Layered Banana Pudding and it came from the Kraftrecipes website.
Let me start by saying that it was delicious!! It was rich and full of flavor; it was also just the right combination of banana and cream.
Now, let’s get to the actual making part…
it took a while, and as a mother, that was not looked upon too kindly by me. Also, it took several dishes, bowls and spoons to make, which meant lots of DIRTY DISHES to take care of afterwards (also not too happy about).
Taking all these things into consideration, I am giving it 4 stars. I will definitely make this again, but just for special occasions.
I’d also like to share a few things about the actual recipe:
I halved it just in case we weren’t huge fans. Regretting that decision now, because it was amazing!
I did not use Cool Whip, but made my own sweetened whipped cream (1 ½ cups). Will share that recipe sometime.
Next time I will make double the crumb mixture because we really liked the flavor and we would’ve liked more crunch.
And I think I’ll use reduced fat cream cheese next time as I don’t really think full fat was necessary.

Next, I made something I never thought I’d be able to make…
Calzones
These are like little pocket pizzas. The recipe came from a cookbook called, Dinner on a Dime.
I steered a bit far from the actual recipe, but the basic concept was the same.
They tasted pretty good, but it was a whole lot of one taste; we should’ve had caesar salad or something with it to give our tastebuds a break.
The preparation was a bit much for the turnout, so I doubt I’d make them again. I give the recipe 3 stars (which many not be fair since I changed it so much, but whatever
)
What I did:
I used crescent rolls instead of bread dough.
Instead of a meat sauce, I substituted with a marinara and sauted veggies.

Finally, I made Effortless Taco Soup, which my friend, Christine at Miss Chris Creations, shared at my recent blog party.
First of all, I loved how easy it was to make! And the taste was brilliant (how can you go wrong with Fritos and taco seasoning?!)
I give it 5 stars and will definitely be making it again! Look at the photo on the bottom right - that’s leftovers for lunches!
A few changes I made:
I used kidney beans instead of black beans.
I unintentionally omitted the tomato sauce because I forgot to buy any!
I used ground turkey instead of ground beef.

I’ll have to try a banana pudding some time. That sounds really good. Every recipe I posted this week was brand new to us. We are getting a great variety of flavors.

I have been cooking new things too! I try to mix it up I can’t stand things to be constant to LONG!!! Been on an EATING cleanse. I tried a fasting one it was A NIGHT MARE!!! That taco soup looks BOMB!!!! I really like you your such a good mom!!! I think we have a lot in common!!
Have you been making dinners? Or something else? Fasting would be impossible for me – I love my food!! haha Thank you, I think the fact that I worry about being a good mom a lot, might possibly mean I already am one! Wdyt? lol
I think that is RIGHT ON!!! Good moms are constantly questioning and trying to improve! Everything is a teaching moment! I do make LOTS of dinners. We eat out maybe 2 times a month. I’m still fat! I don’t drink pop either. My husband stops drinking pop and he eats out all the time HE THINKS I don’t know but I do. A burger here a burger there… He’s lost TONS of weight… The world is NOT FAIR!!!
This may be the diet talking, but I’d eat all of that right now.

I’ll definitely give that a read! What I’m doing isn’t really diet so much as a huge lifestyle change, starting with the Whole30 (but I’m calling that part a diet). I’ve developed issues with dairy in my old age and noticed that I have an extreme sugar dependency. Whole30 is supposed to help you get rid of all those cravings by removing dairy, sugar, grains, and other things from your list of okay foods. The only thing I’m struggling with so far is the rule about no alcohol
Oh, I see!
It just scares me when I hear someone say they’re on a diet because they just don’t work! If we feel deprived, it can’t last that long.
But I understand that kind of sugar dependency! Haha, sorry about the alcohol. With pregnancy and breastfeeding, I haven’t had any alcohol since 2010! lol
The multi-layer pudding looks good. You know, I have found some really good recipes off the Kraft website. My family (hubby) always loves them.Thanks for sharing Valerie. I’ll have to try some of these later this month.
Oh, yeah, I already LOVE the Kraft website! I can’t wait to try some of their slow cooker recipes.
